grocery shopping + cooking for one has actually been really enjoyable these past couple months. i like it because i can cook weird different food that i like without worrying about husband's opinion. what's also great is you can stretch 1 recipe between 2 dinners and even leftovers for lunch! because as much as i enjoy cooking, it sure is nice having leftovers in the fridge after a long day at work.

apparently i was loving roasted squash this season! (tip: roast up a bunch at one time & freeze it in 1 cup portions.) what do you eat when it's just yourself? i usually would go for a bowl of popcorn :) *ps: if you only try one of these recipes, i would highly recommend the risotto...it's what food cravings are made of.
